二. 鐵鍋/鑄鐵鍋

沒有表面化學處理過的鐡鍋/鑄鐡鍋，鐵是熱導性佳的金屬且可回收，材料毛細孔粗大所以使用上清潔與保養不易。一旦完成烹飪要立即用熱水搭配海綿或菜瓜布在鍋具仍然有溫度的時候清潔它。清潔後建議用布或餐巾紙擦乾鍋，並在鍋身上塗上植物油(俗稱養鍋)，避免生銹的問題。
